Butter Pecan Cookies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 3/4 cup brown sugar, packed (light or dark)

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 1/2 cups pecans, chopped (toasted for extra flavor)


Instructions:

  1. Prepare Pecans:
    Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them for about 8-10 minutes, stirring once halfway through, until they’re fragrant and lightly browned. Remove and let cool.

  2. Mix Wet Ingredients:
    In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy—about 3-4 minutes with an electric mixer on medium speed.

  3. Add Egg and Vanilla:
    Beat in the egg and vanilla extract until fully combined.

  4. Combine Dry Ingredients:
    In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Mix Dry into Wet:
    Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Don’t overmix!

  6. Add Pecans:
    Fold the toasted pecans into the dough evenly.

  7. Shape Cookies:
    Using a cookie scoop or tablespoon, drop dough balls onto a baking sheet lined with parchment paper or a silicone mat. Space them about 2 inches apart to allow spreading.

  8. Bake:
    Bake at 350°F (175°C) for 10-12 minutes or until the edges are golden brown but the centers are still soft.

  9. Cool:
    Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.


Tips:

  • For a deeper flavor, try browning the butter before mixing.

  • Store cookies in an airtight container at room temperature for up to a week.

  • You can swap pecans for walnuts or almonds if preferred.
