Fluffy Pancakes

Here’s a tried-and-true recipe for super fluffy pancakes — thick, soft, and perfect every time:


🥞 Fluffy Pancakes Recipe

🕒 Prep Time: 10 minutes | 🍳 Cook Time: 15 minutes | 🍽 Servings: 4 (makes ~8 pancakes)


Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 2 tbsp granulated sugar

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 ¼ cups (300ml) buttermilk (or see substitution below)

  • 1 large egg

  • 2 tbsp unsalted butter, melted (plus more for greasing the pan)

  • 1 tsp vanilla extract


Instructions:

  1. Mix Dry Ingredients
    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. Mix Wet Ingredients
    In another bowl or large measuring cup, whisk buttermilk, egg, melted butter, and vanilla extract until well combined.

  3. Combine
    Pour the wet ingredients into the dry. Stir gently until just combined. A few lumps are okay — don’t overmix! Let the batter rest for 5–10 minutes (this helps the pancakes puff up).

  4. Cook
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup batter per pancake. Cook until bubbles form and the edges look set (2–3 minutes), then flip and cook another 1–2 minutes.

  5. Serve
    Stack ‘em high! Serve warm with butter, maple syrup, berries, or your favorite toppings.


🔁 Buttermilk Substitute:

If you don’t have buttermilk:

  • Mix 1 ¼ cups milk with 1 tbsp lemon juice or vinegar. Let sit for 5–10 minutes before using.


🧁 Tips for Extra Fluffiness:

  • Let the batter rest before cooking.

  • Use fresh baking powder (it loses power over time).

  • Don’t press down on the pancakes with the spatula.

  • For ultra-fluffy: Separate the egg, whip the egg white to soft peaks, and fold it in last.
