Ingredients (Serves 2–3):

1 cup (120g) all-purpose flour

2 tbsp sugar

1 tbsp baking powder

3/4 cup (180ml) milk

1 large egg

2 tbsp melted butter (plus more for the pan)

Instructions:

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt. -
Mix Wet Ingredients
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract. -
Combine
Pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if the batter is a little lumpy — don’t overmix. -
Cook
