English Muffin Breakfast Pizza

Ingredients:

  • 2 English muffins (split into halves)

  • 4 large eggs

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 4 strips of bacon (or sausage, if preferred)

  • 1/2 cup diced tomatoes (optional)

  • 1/4 cup chopped green onions or bell peppers (optional)

  • Salt and pepper to taste

  • Olive oil or cooking spray (for greasing)

Instructions:

  1. Prepare the Ingredients:

    • Cook the bacon in a pan until crispy, then chop it into small pieces.

    • Toast the English muffin halves in a toaster or on a baking sheet until they are golden brown.

    • If you’re using veggies like tomatoes or peppers, chop them into small pieces.

  2. Cook the Eggs:

    • In a pan, scramble the eggs on medium-low heat. Season with a pinch of salt and pepper.

    • Cook until they are just set but still soft. You want them slightly undercooked since they’ll cook a bit more in the oven.

  3. Assemble the Pizzas:

    • Preheat your oven to 375°F (190°C).

    • Place the toasted English muffin halves on a baking sheet.

    • Layer each muffin half with scrambled eggs, bacon, and any other toppings you like (tomatoes, bell peppers, etc.).

    • Top each with shredded cheese.

  4. Bake the Pizzas:

    • Place the baking sheet in the oven and bake for about 5-7 minutes or until the cheese is melted and bubbly.
