Here’s an Easy Hobo Casserole recipe that’s simple, hearty, and delicious—perfect for a budget-friendly weeknight dinner!


Easy Hobo Casserole

Ingredients:

  • 1 lb ground beef

  • 1 small onion, chopped

  • 3-4 medium potatoes, thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese

  • Salt and pepper to taste

  • Optional: garlic powder, paprika, or Worcestershire sauce for extra flavor


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Brown the beef: In a skillet over medium heat, cook ground beef and chopped onion until beef is browned. Drain excess grease. Season with salt, pepper, and optional spices.

  3. Prepare the sauce: In a bowl, mix the cream of mushroom soup and milk until smooth.

  4. Assemble the casserole:

    • Grease a 9×13-inch baking dish.

    • Layer half the sliced potatoes on the bottom.

    • Spread half the beef mixture over the potatoes.

    • Pour half the soup mixture over the top.

    • Repeat layers with remaining potatoes, beef, and soup.

    • Top with shredded cheese.

  5. Bake: Cover with foil and bake for 45 minutes. Then remove foil and bake an additional 15–20 minutes, until potatoes are tender and cheese is bubbly and golden.

  6. Serve: Let sit for 5 minutes before serving.


Tips:

  • Add green beans, corn, or bell peppers for extra veggies.

  • Substitute ground turkey or sausage if you prefer.

  • Use cream of chicken or cheddar soup for variety.
