Easy Chicken Cobbler Dinner Casserole

Ingredients:

  • 3 cups cooked chicken (shredded or diced)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese (plus extra for topping)

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 1/2 cup milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 1 tube refrigerated biscuit dough (like Pillsbury)


Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, mix together the cooked chicken, cream of chicken soup, sour cream, milk, frozen mixed vegetables, cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.

  3. Pour the mixture into a greased 9×13-inch casserole dish and spread it evenly.

  4. Separate the biscuit dough into individual biscuits. Cut each biscuit into halves or quarters, then arrange the pieces on top of the chicken mixture, covering the entire surface.

  5. Sprinkle a little extra shredded cheddar cheese on top of the biscuit pieces if you like.

  6. Bake uncovered for 25-30 minutes or until the biscuits are golden brown and cooked through, and the casserole is bubbly.

  7. Let it cool a few minutes before serving. Enjoy!
