Ingredients

Chocolate Cake Layer:

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 6 tbsp unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/3 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 tbsp white vinegar

  • 1 cup cold water

Strawberry Ice Cream Layer:

  • 1.5 quarts (1 container) premium strawberry ice cream, slightly softened

  • 1/2 cup diced fresh strawberries (optional, for extra texture)

Chocolate Ganache:

  • 1 cup heavy cream

  • 8 oz semisweet or dark chocolate, finely chopped

Toppings (choose your fantasy!):

  • Fresh strawberries, halved

  • Chocolate shavings or curls

  • Crushed chocolate cookies or brownie crumbs

  • Whipped cream

  • Strawberry sauce or jam drizzle

  • Mini chocolate chips


Instructions

1. Bake the Chocolate Cake:

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.

  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

  3. Add oil, vanilla, vinegar, and cold water. Stir until just combined (no mixer needed).

  4. Pour into the pan and bake for 30–35 minutes or until a toothpick comes out clean.

  5. Let cool completely. Remove cake from pan, clean the pan, and line it with plastic wrap.

2. Assemble the Ice Cream Cake:

  1. Return the cooled chocolate cake to the bottom of the springform pan.

  2. Spread softened strawberry ice cream evenly over the cake layer.

  3. Smooth the top with a spatula. Cover and freeze for at least 4–6 hours or overnight.

3. Make the Ganache:

  1. Heat cream in a saucepan until it just starts to simmer. Do not boil.

  2. Pour over chopped chocolate in a bowl. Let sit 2–3 minutes, then stir until smooth and glossy.

  3. Cool for 10 minutes, then pour over the frozen cake, letting it drip over the sides.

  4. Return to freezer for 30–60 minutes to set.

4. Decorate & Serve:

  1. Add your fantasy toppings: strawberries, whipped cream, chocolate shavings, etc.

  2. Let sit at room temperature for 5–10 minutes before slicing.

  3. Use a sharp knife dipped in hot water for clean slices.


Tips:

  • Want extra crunch? Add a layer of crushed Oreos or graham crackers between the cake and ice cream.

  • For a shortcut, use a boxed chocolate cake mix.

  • Can be made up to 3 days ahead and stored well-wrapped in the freezer.
