Here’s a Decadent & Light Strawberry Dream Fool recipe that’s both indulgent and airy — the perfect summer dessert that balances richness with a cloud-like texture.


🍓 Strawberry Dream Fool

Serves: 4

Chill Time: 30 minutes (optional)


🛒 Ingredients

For the strawberry purée:

  • 2 cups (300g) fresh strawberries, hulled and halved

  • 2 tbsp sugar (adjust to taste)

  • 1 tsp lemon juice

  • 1 tsp vanilla extract (optional)

For the cream mixture:

  • 1 cup (240ml) heavy cream (or double cream)

  • 2 tbsp powdered sugar (or more if you like it sweeter)

  • ½ tsp vanilla bean paste or extract

Optional mix-ins/toppings:

  • Crushed meringue nests or ladyfingers

  • Extra sliced strawberries

  • Mint leaves

  • White chocolate shavings


🍴 Instructions

1. Make the Strawberry Purée

  • In a blender or food processor, combine the strawberries, sugar, lemon juice, and vanilla.

  • Blend until smooth (or leave slightly chunky if you prefer texture).

  • Taste and adjust sweetness if needed.

  • Set aside or chill.

2. Whip the Cream

  • In a chilled bowl, beat the heavy cream with powdered sugar and vanilla until soft peaks form. Don’t overwhip — we’re going for silky, not stiff.

3. Assemble the Fool

  • Gently fold about two-thirds of the strawberry purée into the whipped cream — use a few folds only to create a marbled, “dreamy” swirl.

  • Spoon into serving glasses or bowls.

  • Top with remaining purée.

4. Add Toppings (Optional but Recommended)

  • Crushed meringue for crunch

  • Fresh strawberry slices for brightness

  • A mint leaf for contrast

  • White chocolate shavings for decadence

5. Chill or Serve

  • Serve immediately for a soft, fluffy texture, or chill for 30 minutes to firm it up slightly.

  • You can swap strawberries with raspberries or a mixed berry blend.

  • For an ultra-light version, use Greek yogurt or mascarpone folded with a smaller amount of whipped cream.

  • Add a spoonful of liqueur (like Grand Marnier) to the purée for a grown-up twist.
