Ingredients

  • Dried Raisins: 1 cup (soaked in warm water for 15 minutes)

  • All-Purpose Flour: 3 cups

  • Active Dry Yeast: 2¼ teaspoons (1 packet)

  • Warm Milk: ½ cup (110°F/45°C)

  • Unsalted Butter: ½ cup (softened)

  • Granulated Sugar: ½ cup

  • Eggs: 2 large (room temperature)

  • Ground Cinnamon: 1 teaspoon

  • Ground Nutmeg: ½ teaspoon

  • Ground Cloves: ¼ teaspoon

  • Ground Curry Powder: 1 tablespoon

  • Salt: ½ teaspoon

  • Lemon Zest: 1 lemon

  • Chopped Walnuts: ½ cup (optional)

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk and yeast. Let it sit for 5–10 minutes until frothy.

  2. Prepare Dry Ingredients: In a large mixing bowl, sift together flour, cinnamon, nutmeg, cloves, curry powder, and salt.

  3. Mix Wet Ingredients: In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in lemon zest.

  4. Combine Mixtures: Gradually add the yeast mixture to the wet ingredients, then fold in the dry ingredients until a sticky dough forms.

  5. Incorporate Raisins and Nuts: Drain and pat dry the soaked raisins. Gently fold them into the dough along with chopped walnuts, if using.

  6. First Rise: Cover the bowl with a damp cloth and let the dough rise in a warm place for 1–1.5 hours, or until doubled in size.

  7. Prepare the Pan: Grease a Gugelhupf or Bundt pan with butter and lightly dust with flour.

  8. Shape and Second Rise: Punch down the risen dough and transfer it to the prepared pan. Cover and let it rise for another 30–45 minutes.

  9. Bake: Preheat the oven to 350°F (175°C). Bake the cake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.

  10. Cool and Serve: Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
