Cucumbers in Spicy Peanut Sauce

Ingredients:

  • 2 medium cucumbers (English or regular), thinly sliced

  • 3 tablespoons peanut butter (creamy or chunky)

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar (or white vinegar)

  • 1 teaspoon sesame oil

  • 1 teaspoon honey or sugar

  • 1-2 teaspoons sriracha (adjust to your heat preference)

  • 1 garlic clove, minced

  • 1 tablespoon water (to thin the sauce)

  • Optional toppings: chopped peanuts, sesame seeds, chopped green onions, cilantro

Instructions:

  1. Prepare cucumbers: Thinly slice the cucumbers (you can peel them if you want, but leaving the skin adds nice color and texture). Place them in a bowl.

  2. Make the spicy peanut sauce:
    In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, minced garlic, and water until smooth and creamy. Add more water if needed to reach a pourable consistency.

  3. Combine: Pour the peanut sauce over the sliced cucumbers and toss well to coat evenly.

  4. Chill and serve: Let it sit in the fridge for 15-20 minutes to allow flavors to meld. Before serving, sprinkle with chopped peanuts, sesame seeds, green onions, or cilantro for extra flavor and crunch.


Want a vegan or gluten-free version? Just use tamari instead of soy sauce and maple syrup or agave instead of honey!
