Cucumber,apple and lettuce at kewpie ang dressing

Here’s a  recipe for a fresh and tasty Cucumber, Apple, and Lettuce Salad with Kewpie Dressing — a great combo of crisp veggies/fruits and that creamy, umami-rich Kewpie mayo dressing.


Ingredients

For the Salad:

  • 1 medium cucumber (thinly sliced or julienned)

  • 1 medium apple (preferably a crisp variety like Fuji or Honeycrisp, thinly sliced or julienned)

  • 1 small head of lettuce (like iceberg, romaine, or butter lettuce, roughly chopped or torn into bite-sized pieces)

For the Kewpie Dressing:

  • 3 tablespoons Kewpie mayonnaise (Japanese mayo, creamier and slightly tangier than regular mayo)

  • 1 tablespoon rice vinegar (or apple cider vinegar)

  • 1 teaspoon soy sauce

  • 1 teaspoon honey (adjust to taste)

  • 1 teaspoon sesame oil (toasted sesame oil for that nutty aroma)

  • 1 teaspoon lemon juice (optional, for extra tang)

  • Freshly ground black pepper, to taste


Instructions

Salad Prep:

  1. Wash and dry the lettuce leaves, then chop or tear them into bite-sized pieces.

  2. Wash the cucumber and slice it thinly (or julienne for a more delicate texture).

  3. Core the apple and slice thinly. You can leave the peel on for extra color and nutrients.

  4. Combine cucumber, apple, and lettuce in a large salad bowl.

Dressing Prep:

  1. In a small bowl, whisk together Kewpie mayonnaise, rice vinegar, soy sauce, honey, sesame oil, and lemon juice (if using).

  2. Taste and adjust sweetness or acidity by adding a little more honey or vinegar as preferred.

  3. Add black pepper to taste.

Assembly:

  1. Drizzle the dressing over the salad ingredients.

  2. Toss gently until everything is coated evenly.

  3. Serve immediately for the freshest taste.


Optional Add-ons:

  • Toasted sesame seeds for garnish

  • Thinly sliced red onion or green onion for extra bite

  • A handful of chopped nuts (like walnuts or almonds) for crunch

  • A sprinkle of chili flakes if you want a spicy kick
