Here’s a  recipe for a Crunchy Southwestern Chicken Wrap—a tasty, crunchy, and flavorful wrap with a southwestern twist. Perfect for lunch or dinner!


Crunchy Southwestern Chicken Wrap Recipe

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of half a lime

For the Wrap:

  • 4 large flour tortillas (10-inch size works well)

  • 1 cup shredded lettuce (romaine or iceberg)

  • 1 cup shredded cheddar or Mexican blend cheese

  • 1/2 cup corn kernels (fresh, canned, or thawed frozen)

  • 1/2 cup black beans (rinsed and drained if canned)

  • 1 small tomato, diced

  • 1/4 cup red onion, finely chopped

  • 1 avocado, sliced or mashed

  • 1/2 cup crispy tortilla strips or crushed tortilla chips for crunch

  • Fresh cilantro, chopped (optional)

For the Sauce (Creamy Southwest Dressing):

  • 1/2 cup sour cream or Greek yogurt

  • 1 tablespoon mayonnaise (optional, for extra creaminess)

  • 1 teaspoon lime juice

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste

  • Hot sauce to taste (optional)


Instructions:

1. Prepare the Chicken:

  • In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.

  • Rub the chicken breasts with olive oil and then coat evenly with the spice mix.

  • Heat a skillet over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until fully cooked (internal temp 165°F/74°C).

  • Squeeze lime juice over the chicken while it’s hot.

  • Let the chicken rest for 5 minutes, then slice into thin strips.

2. Make the Sauce:

  • In a small bowl, whisk together sour cream, mayonnaise (if using), lime juice, chili powder, cumin, garlic powder, salt, pepper, and hot sauce if desired.

  • Adjust seasoning to taste.

3. Assemble the Wraps:

  • Warm tortillas slightly to make them more pliable (microwave for 10-15 seconds or heat on a dry skillet).

  • Spread 2-3 tablespoons of the creamy southwest sauce evenly over each tortilla.

  • Layer shredded lettuce, sliced chicken, corn, black beans, diced tomato, red onion, avocado, and cheese.

  • Sprinkle crispy tortilla strips or crushed chips on top for crunch.

  • Add fresh cilantro if using.

4. Wrap it Up:

  • Fold in the sides of the tortilla, then roll tightly from one end to the other.

  • Slice in half if desired and serve immediately.


Tips:

  • You can swap chicken for grilled shrimp or steak.

  • Add some jalapeños for extra heat.

  • Use whole wheat or spinach tortillas for a healthier twist.

  • If you want it cold, prepare everything in advance and serve chilled.
