-
1/2 cup cowboy butter (see notes below or use store-bought)
-
4 cloves garlic, minced
-
1 tsp smoked paprika
-
1 tsp dried oregano
-
1 tsp dried thyme
-
1 tsp onion powder
-
Salt & pepper to taste
-
-
Potatoes:
-
1.5 lbs golden baby potatoes (or small Yukon gold potatoes), halved or quartered if large
-
2 tbsp olive oil
-
1/2 tsp salt
-
1/4 tsp black pepper
-
1 tsp garlic powder
-
Fresh parsley, chopped (optional, for garnish)
-
Cowboy Butter (If making your own):
-
1/2 cup unsalted butter, softened
-
2 cloves garlic, minced
-
1 tbsp lemon juice
-
1 tsp smoked paprika
-
1 tsp chopped fresh parsley (or 1/2 tsp dried)
-
1/2 tsp onion powder
-
1/4 tsp cayenne pepper (optional for heat)
-
Salt & pepper to taste
Mix all ingredients well and refrigerate until ready to use.
Instructions:
1. Prepare the potatoes:
-
Toss the halved golden potatoes with olive oil, salt, pepper, and garlic powder in a large bowl until evenly coated.
-
Place the potatoes in the bottom of the slow cooker, spreading them out in an even layer.
2. Prepare the chicken:
-
In a small bowl, mix the cowboy butter, minced garlic, smoked paprika, oregano, thyme, onion powder, salt, and pepper.
-
Rub this mixture all over the chicken breasts, making sure to coat them well.
3. Assemble in the crockpot:
-
Place the seasoned chicken breasts on top of the potatoes in the crockpot.
-
Add any remaining cowboy butter mixture on top or around the chicken.
4. Cook:
-
Cover and cook on low for 5-6 hours, or until the chicken is cooked through and the potatoes are tender.
-
(If you’re in a hurry, cook on high for 3-4 hours, but low is best for tenderness.)
5. Serve:
-
Carefully remove the chicken and potatoes from the crockpot.
-
Spoon some of the garlic butter sauce from the crockpot over the chicken and potatoes.
-
Garnish with fresh parsley if desired.
-
Serve hot with a side salad or steamed veggies.
Tips:
-
Cowboy butter adds a rich, tangy, and slightly spicy flavor that makes the dish unique.
-
Baby potatoes work best since they cook evenly without needing to be parboiled.
-
You can add other veggies like carrots or green beans around the edges for a full meal.
-
Leftovers reheat well and the flavors deepen overnight.
