Here’s a  recipe for Crockpot Cowboy Butter Garlic Chicken & Golden Potato Bake — a comforting, flavorful dish where tender chicken and golden potatoes cook slowly with rich garlic butter and savory seasonings. Perfect for an easy, hearty meal!


Crockpot Cowboy Butter Garlic Chicken & Golden Potato Bake

Ingredients:

  • Chicken:

    • 4 boneless, skinless chicken breasts (or thighs if preferred)

    • 1/2 cup cowboy butter (see notes below or use store-bought)

    • 4 cloves garlic, minced

    • 1 tsp smoked paprika

    • 1 tsp dried oregano

    • 1 tsp dried thyme

    • 1 tsp onion powder

    • Salt & pepper to taste

  • Potatoes:

    • 1.5 lbs golden baby potatoes (or small Yukon gold potatoes), halved or quartered if large

    • 2 tbsp olive oil

    • 1/2 tsp salt

    • 1/4 tsp black pepper

    • 1 tsp garlic powder

    • Fresh parsley, chopped (optional, for garnish)


Cowboy Butter (If making your own):

  • 1/2 cup unsalted butter, softened

  • 2 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tsp smoked paprika

  • 1 tsp chopped fresh parsley (or 1/2 tsp dried)

  • 1/2 tsp onion powder

  • 1/4 tsp cayenne pepper (optional for heat)

  • Salt & pepper to taste

Mix all ingredients well and refrigerate until ready to use.


Instructions:

1. Prepare the potatoes:

  • Toss the halved golden potatoes with olive oil, salt, pepper, and garlic powder in a large bowl until evenly coated.

  • Place the potatoes in the bottom of the slow cooker, spreading them out in an even layer.

2. Prepare the chicken:

  • In a small bowl, mix the cowboy butter, minced garlic, smoked paprika, oregano, thyme, onion powder, salt, and pepper.

  • Rub this mixture all over the chicken breasts, making sure to coat them well.

3. Assemble in the crockpot:

  • Place the seasoned chicken breasts on top of the potatoes in the crockpot.

  • Add any remaining cowboy butter mixture on top or around the chicken.

4. Cook:

  • Cover and cook on low for 5-6 hours, or until the chicken is cooked through and the potatoes are tender.

  • (If you’re in a hurry, cook on high for 3-4 hours, but low is best for tenderness.)

5. Serve:

  • Carefully remove the chicken and potatoes from the crockpot.

  • Spoon some of the garlic butter sauce from the crockpot over the chicken and potatoes.

  • Garnish with fresh parsley if desired.

  • Serve hot with a side salad or steamed veggies.


Tips:

  • Cowboy butter adds a rich, tangy, and slightly spicy flavor that makes the dish unique.

  • Baby potatoes work best since they cook evenly without needing to be parboiled.

  • You can add other veggies like carrots or green beans around the edges for a full meal.

  • Leftovers reheat well and the flavors deepen overnight.
