Here’s a crispy potato skins recipe that delivers on flavor and crunch — perfect for a snack or appetizer!


🥔 Crispy Potato Skins Recipe

Ingredients:

  • 4 medium russet potatoes (scrubbed clean)

  • 2 tablespoons olive oil (or melted butter)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon garlic powder (optional)

  • 1 cup shredded cheddar cheese

  • 4 slices bacon, cooked and crumbled

  • 2 green onions, chopped

  • Sour cream (for serving)


Instructions:

  1. Bake the Potatoes:

    • Preheat oven to 400°F (200°C).

    • Prick potatoes with a fork a few times and bake on a rack or baking sheet for 45–50 minutes until tender.

    • Let them cool until you can handle them comfortably.

  2. Prepare the Skins:

    • Cut each potato in half lengthwise.

    • Scoop out most of the flesh, leaving about 1/4-inch thick shell (you can save the scooped-out potato for mashed potatoes or another dish).

    • Cut each half again if you want quarters (more bite-sized).

  3. Crisp the Skins:

    • Brush both sides with olive oil or melted butter. Sprinkle with salt, pepper, and garlic powder.

    • Place skins skin-side down on a baking sheet.

    • Bake at 450°F (230°C) for about 10–15 minutes, flipping halfway, until edges are golden and crispy.

  4. Add Toppings:

    • Sprinkle cheese and bacon onto the skins.

    • Return to the oven and bake for another 5–7 minutes, until cheese is melted and bubbly.

  5. Finish & Serve:

    • Remove from oven, top with green onions.

    • Serve hot with sour cream or ranch dressing.


🔁 Optional Twists:

  • Use pepper jack or gouda for a flavor change.

  • Add jalapeños or a drizzle of hot sauce for heat.

  • Make it vegetarian by omitting bacon and adding sautéed mushrooms or black beans.
