-
4 medium russet potatoes (scrubbed clean)
-
2 tablespoons olive oil (or melted butter)
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
1/2 teaspoon garlic powder (optional)
-
1 cup shredded cheddar cheese
-
4 slices bacon, cooked and crumbled
-
2 green onions, chopped
-
Sour cream (for serving)
Instructions:
-
Bake the Potatoes:
-
Preheat oven to 400°F (200°C).
-
Prick potatoes with a fork a few times and bake on a rack or baking sheet for 45–50 minutes until tender.
-
Let them cool until you can handle them comfortably.
-
-
Prepare the Skins:
-
Cut each potato in half lengthwise.
-
Scoop out most of the flesh, leaving about 1/4-inch thick shell (you can save the scooped-out potato for mashed potatoes or another dish).
-
Cut each half again if you want quarters (more bite-sized).
-
-
Crisp the Skins:
-
Brush both sides with olive oil or melted butter. Sprinkle with salt, pepper, and garlic powder.
-
Place skins skin-side down on a baking sheet.
-
Bake at 450°F (230°C) for about 10–15 minutes, flipping halfway, until edges are golden and crispy.
-
-
Add Toppings:
-
Sprinkle cheese and bacon onto the skins.
-
Return to the oven and bake for another 5–7 minutes, until cheese is melted and bubbly.
-
-
Finish & Serve:
-
Remove from oven, top with green onions.
-
Serve hot with sour cream or ranch dressing.
-
🔁 Optional Twists:
-
Use pepper jack or gouda for a flavor change.
-
Add jalapeños or a drizzle of hot sauce for heat.
-
Make it vegetarian by omitting bacon and adding sautéed mushrooms or black beans.
