Here’s a simple and delicious Crispy Parmesan Roasted Squash recipe for you!


Crispy Parmesan Roasted Squash

Ingredients:

  • 2 medium yellow squash or zucchini, sliced into 1/4-inch rounds

  • 2 tablespoons olive oil

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • Optional: 1 teaspoon dried Italian herbs or fresh chopped parsley for garnish


Instructions:

  1. Preheat Oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare Squash:
    Wash and dry the squash, then slice into about 1/4-inch thick rounds.

  3. Season Squash:
    In a large bowl, toss the squash slices with olive oil, garlic powder, salt, and pepper until evenly coated.

  4. Add Parmesan:
    Sprinkle the grated Parmesan over the squash slices and toss again gently to coat them with cheese.

  5. Arrange on Baking Sheet:
    Lay the slices in a single layer on the prepared baking sheet, making sure they don’t overlap (this helps them get crispy).

  6. Roast:
    Bake for 15-20 minutes, flipping halfway through, until the squash is golden brown and crispy at the edges.

  7. Serve:
    Remove from the oven and sprinkle with dried Italian herbs or fresh parsley if you like. Serve immediately for best crispiness.
