Crispy Parmesan Garlic Zucchini Fries

Here’s a simple and delicious recipe for Crispy Parmesan Garlic Zucchini Fries:

Ingredients:

  • 2 medium zucchinis

  • 1 cup grated Parmesan cheese

  • 1 cup panko breadcrumbs (for extra crunch)

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano (optional)

  • Salt and pepper to taste

  • 2 large eggs

  • 1 tablespoon olive oil (for drizzling)

  • Fresh parsley (for garnish, optional)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

  2. Prepare the Zucchini:

    • Cut the zucchinis into fries. Slice off the ends, then cut them in half lengthwise, and slice each half into 3-4 strips (depending on how thick you want them).

    • You can scoop out the seeds to make the fries less watery, but it’s optional.

  3. Make the Breading Mixture:

    • In one shallow bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, dried oregano, and a pinch of salt and pepper.

    • In another shallow bowl, whisk the eggs until well-beaten.

  4. Coat the Zucchini Fries:

    • Dip each zucchini strip into the egg mixture, making sure it’s well-coated.

    • Then, roll the zucchini in the breadcrumb mixture, pressing gently to ensure the coating sticks.

    • Place the coated fries on the prepared baking sheet in a single layer.

  5. Bake the Fries:

    • Lightly drizzle the zucchini fries with olive oil to help them crisp up.

    • Bake for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.

  6. Serve:

    • Once out of the oven, garnish with freshly chopped parsley if desired.

    • Serve with a side of marinara sauce or ranch dressing for dipping.

Tips:

  • For extra crispiness: You can lightly spray the zucchini fries with cooking spray before baking.

  • Add more flavors: Feel free to add some red pepper flakes or lemon zest for extra zing!

  • Air fryer option: If you want to cook them faster, try air frying at 400°F for about 15-18 minutes, flipping halfway.
