Here’s a  recipe for Crispy Mozzarella Sausage Sourdough Buns — a delicious combination of chewy sourdough buns filled with savory sausage and gooey mozzarella, baked until crispy on the outside.


Crispy Mozzarella Sausage Sourdough Buns Recipe

Ingredients

For the Sourdough Buns:

  • 2 cups (240g) all-purpose flour

  • 1 cup (120g) sourdough starter (active and bubbly)

  • 1/2 cup (120ml) warm water

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1 tbsp sugar (optional, for slight sweetness)

  • 1 tsp instant yeast (optional, for faster rise)

For the Filling:

  • 4-5 sausages (Italian, breakfast, or your choice)

  • 1 1/2 cups shredded mozzarella cheese

  • 1 small onion, finely chopped (optional)

  • 1 garlic clove, minced (optional)

  • Salt & pepper to taste

  • 1 tbsp olive oil or butter (for cooking sausage and onion)

For Assembly and Baking:

  • 1 egg, beaten (for egg wash)

  • Extra flour for dusting

  • Optional: herbs like oregano or basil for garnish


Instructions

1. Prepare the dough:

  • In a large bowl, mix the sourdough starter, warm water, and olive oil.

  • Add the flour, salt, sugar, and yeast (if using) gradually. Mix until a dough forms.

  • Knead the dough for about 8-10 minutes until smooth and elastic. You can do this by hand or with a stand mixer.

  • Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise for 3-4 hours or until doubled in size. (If using yeast, it may rise faster.)

2. Cook the sausage filling:

  • Remove sausage casing if necessary and crumble the sausage into a skillet over medium heat.

  • Add chopped onion and garlic if using, and cook until sausage is fully browned and onion is soft.

  • Season with salt and pepper.

  • Drain excess grease and let cool slightly.

3. Shape and fill the buns:

  • Once the dough has risen, punch it down and divide it into 8 equal pieces.

  • On a floured surface, roll each piece into a small circle (about 4-5 inches diameter).

  • Spoon some sausage mixture into the center, then sprinkle a generous amount of shredded mozzarella on top.

  • Fold the dough over the filling and pinch edges to seal well, shaping into a round bun.

  • Place the buns seam-side down on a parchment-lined baking sheet.

4. Second rise:

  • Cover the buns loosely with a clean towel.

  • Let them rise for another 45 minutes to 1 hour until puffy.

5. Bake the buns:

  • Preheat the oven to 400°F (200°C).

  • Brush each bun with beaten egg for a golden, crispy crust.

  • Optionally, sprinkle some herbs or extra cheese on top.

  • Bake for 18-22 minutes or until golden brown and crispy on the outside.

6. Serve:

  • Let the buns cool for a few minutes before serving.

  • Enjoy warm with a side of marinara sauce for dipping, if desired!
