Crispy Amish Onion Fritters Delight

Ingredients:

  • 2 large onions, thinly sliced

  • 1 cup all-purpose flour

  • 2 eggs

  • 1/4 cup milk (or buttermilk for tang)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp garlic powder (optional)

  • 1/4 tsp paprika (optional)

  • Fresh parsley or chives, chopped (optional)

  • Vegetable oil (for frying)


Instructions:

  1. Prep onions: Thinly slice the onions and separate into rings or smaller pieces.

  2. Make batter: In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and paprika. Mix flour and baking powder separately, then slowly add to wet ingredients until smooth.

  3. Combine: Fold the onions into the batter until fully coated.

  4. Heat oil: In a skillet or deep fryer, heat about 1 inch of vegetable oil to 350°F (175°C).

  5. Fry: Drop spoonfuls of the onion batter into hot oil. Fry for 2-3 minutes on each side or until golden brown and crispy.

  6. Drain: Remove fritters with a slotted spoon and place on paper towels to drain excess oil.

  7. Serve: Sprinkle with fresh parsley or chives, and serve hot with your favorite dipping sauce — ranch, honey mustard, or spicy aioli work great.
