Creamy Velveeta Chicken Linguine with Mozzarella Garlic Sauce

Ingredients:

  • For the chicken linguine:

    • 12 oz linguine pasta

    • 2 tbsp olive oil

    • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)

    • Salt and pepper, to taste

    • 1 tsp garlic powder

    • 1 tsp Italian seasoning

  • For the sauce:

    • 2 tbsp butter

    • 4 cloves garlic, minced

    • 8 oz Velveeta cheese, cubed

    • 1 cup shredded mozzarella cheese

    • 1 ½ cups whole milk (or half-and-half for extra creaminess)

    • ½ cup grated Parmesan cheese

    • ½ tsp crushed red pepper flakes (optional)

    • Salt and pepper, to taste

    • Fresh parsley or basil, chopped (for garnish)


Instructions:

  1. Cook the pasta:
    Bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Drain and set aside.

  2. Cook the chicken:
    In a large skillet over medium-high heat, heat olive oil. Season chicken pieces with salt, pepper, garlic powder, and Italian seasoning. Add chicken to skillet and cook until golden and cooked through (about 5-7 minutes). Remove chicken and set aside.

  3. Make the mozzarella garlic sauce:
    In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
    Reduce heat to low and add cubed Velveeta cheese, shredded mozzarella, and milk. Stir continuously until cheeses melt completely and the sauce becomes smooth and creamy.
    Stir in Parmesan cheese and crushed red pepper flakes (if using). Season with salt and pepper to taste.

  4. Combine:
    Return the cooked chicken to the skillet with the sauce, stir to coat. Add the cooked linguine and toss gently to combine everything evenly.

  5. Serve:
    Garnish with chopped fresh parsley or basil. Serve hot.


Tips:

  • For extra flavor, sauté some sliced mushrooms or spinach with the garlic.

  • Use low-moisture mozzarella for a better melt and creamier texture.

  • You can swap chicken for shrimp or keep it vegetarian by adding roasted veggies.
