📝 Ingredients:

For the Base (Optional – like a cheesecake crust):

  • 1½ cups digestive biscuits or graham crackers (crushed)

  • ¼ cup melted butter

For the Creamy Pineapple Layer:

  • 1 cup crushed pineapple (canned or fresh)

  • ½ cup pineapple juice (from the can or fresh)

  • 1 tbsp cornstarch (cornflour)

  • 2 tbsp sugar (adjust to taste)

For the Cream Mixture:

  • 1 cup whipping cream or heavy cream (chilled)

  • ½ cup sweetened condensed milk (adjust to taste)

  • ½ tsp vanilla extract

  • ½ cup cream cheese or hung curd (optional, for a richer texture)


🍳 Instructions:

1. Prepare the Base (Optional Step)

If you want a crust:

  1. Crush biscuits or graham crackers until fine.

  2. Mix with melted butter.

  3. Press into the base of a serving dish or tray.

  4. Chill in the fridge while preparing the rest.

2. Make the Pineapple Sauce

  1. In a saucepan, combine crushed pineapple, pineapple juice, sugar, and cornstarch.

  2. Cook on medium heat, stirring continuously until it thickens (3–5 minutes).

  3. Once it becomes a jelly-like sauce, remove from heat and let it cool completely.

3. Whip the Cream

  1. In a mixing bowl, whip the chilled whipping cream until soft peaks form.

  2. Add in condensed milk, vanilla, and cream cheese or hung curd (if using).

  3. Fold gently until smooth and creamy. Adjust sweetness if needed.

4. Assemble the Dessert

  1. In a large dish or individual cups, spread a layer of the whipped cream mixture.

  2. Top with a layer of the cooled pineapple sauce.

  3. Repeat layers if desired, ending with a swirl of pineapple on top.

5. Chill

  • Cover and refrigerate for at least 4–6 hours or overnight for best texture.


🍽️ To Serve:

  • Garnish with chopped pineapple pieces, mint leaves, or toasted coconut flakes.


💡 Tips:

  • Cornstarch acts as the thickener in place of gelatin—make sure it’s cooked properly for it to set.

  • For a vegan version: use coconut cream instead of dairy cream and plant-based condensed milk.

  • Want a tropical twist? Add shredded coconut to the cream layer.

  • You can skip the base and serve this in dessert cups as a parfait.
