Creamy Parmesan Herb Chicken Penne
Ingredients:

12 oz penne pasta

2 tbsp olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup heavy cream
-
1 cup chicken broth
-
1 cup freshly grated Parmesan cheese

1 tsp dried Italian herbs (or mix of basil, oregano, thyme)

1/2 tsp red pepper flakes (optional)

2 tbsp fresh parsley, chopped (plus more for garnish)

1/2 cup sun-dried tomatoes (optional, for extra flavor)
Instructions:

Cook the pasta:
Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Drain and set aside. -
Cook the chicken:
In a large skillet, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper. Add to skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside. -
Make the sauce:
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and heavy cream. Stir well to combine.
