Creamy Garlic Parmesan Pasta with a Flavorful Twist

🧄 Ingredients:

For the pasta:

  • 12 oz fettuccine or linguine

  • Salt (for pasta water)

For the sauce:

  • 2 tbsp olive oil or unsalted butter

  • 6 cloves garlic, minced

  • 1 tsp crushed red pepper flakes (adjust to taste)

  • 1 tbsp sun-dried tomatoes in oil, finely chopped (optional but adds great depth)

  • 1 tbsp tomato paste (for extra umami)

  • 1 cup heavy cream

  • 1/2 cup chicken or vegetable broth

  • 3/4 cup freshly grated Parmesan cheese

  • Zest of 1 lemon

  • 2 tbsp lemon juice

  • Salt and black pepper, to taste

Optional add-ins for the twist:

  • 1 cup baby spinach (stirred in at the end to wilt)

  • Grilled chicken, shrimp, or mushrooms

  • Fresh basil or parsley for garnish


🔪 Instructions:

  1. Cook the pasta:

    • Bring a large pot of salted water to a boil.

    • Cook pasta according to package directions until al dente.

    • Reserve 1 cup of pasta water, then drain and set aside.

  2. Sauté the aromatics:

    • In a large skillet over medium heat, heat olive oil or butter.

    • Add minced garlic, red pepper flakes, sun-dried tomatoes, and tomato paste. Sauté for 2–3 minutes until fragrant and the tomato paste darkens slightly.

  3. Create the creamy base:

    • Lower the heat and stir in the heavy cream and broth.

    • Simmer for 3–4 minutes until slightly thickened.

  4. Finish the sauce:

    • Stir in Parmesan cheese, lemon zest, and lemon juice.

    • Season with salt and pepper to taste.

    • If the sauce is too thick, thin with a bit of reserved pasta water.

  5. Combine:

    • Toss in the cooked pasta and baby spinach (if using).

    • Mix well until pasta is coated and spinach is wilted.

    • Add grilled chicken, shrimp, or mushrooms if desired.

  6. Serve:

    • Garnish with extra Parmesan, fresh basil or parsley, and a light drizzle of olive oil if you like.


🔄 Variations:

  • Spicy Cajun Twist: Add 1 tsp Cajun seasoning instead of red pepper flakes.

  • Umami Boost: Add a splash of soy sauce or a few anchovy fillets during the garlic sauté step.

  • Vegan Option: Use plant-based cream, broth, and Parmesan.
