Ingredients:
-
2 medium cucumbers, thinly sliced
-
1/2 small red onion, thinly sliced (optional)
-
1/2 cup sour cream or Greek yogurt
-
2 tablespoons mayonnaise (optional for extra creaminess)
-
1 tablespoon white vinegar or lemon juice
-
1 teaspoon sugar or honey (optional, to balance the tartness)
-
1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
-
Salt and pepper, to taste
Instructions:
-
Prepare the cucumbers: Thinly slice the cucumbers, and if you’d like, sprinkle them lightly with salt. Let them sit for about 10 minutes to draw out excess moisture, then gently pat them dry with a paper towel.
-
Make the dressing: In a bowl, mix the sour cream (or Greek yogurt), mayonnaise, vinegar or lemon juice, sugar, dill, salt, and pepper.
-
Combine: Add the cucumber slices and red onion (if using) to the dressing. Toss everything together until evenly coated.
-
Chill and serve: Let the salad chill in the fridge for at least 30 minutes before serving for the best flavor. You can also garnish with extra dill or a sprinkle of fresh cracked pepper.
