🥗 Creamy Crunchy Broccoli Apple Slaw

🧺 Ingredients

For the slaw:

  • 4 cups broccoli florets, finely chopped (or use a bag of broccoli slaw mix)

  • 1 large apple, julienned or thinly sliced (Honeycrisp or Fuji work great)

  • 1 cup shredded carrots

  • ½ cup red cabbage, thinly sliced (optional, for color and crunch)

  • ⅓ cup red onion, thinly sliced

  • ⅓ cup dried cranberries or raisins

  • ¼ cup sunflower seeds or chopped walnuts

  • ¼ cup chopped fresh parsley (optional)

For the creamy dressing:

  • ½ cup mayonnaise (or use half Greek yogurt for a lighter version)

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon Dijon mustard

  • Salt and black pepper to taste

  1. Prep the veggies and fruit: Chop broccoli into small pieces if using whole florets. Julienne the apple (skin on is fine). Combine with carrots, cabbage, onion, cranberries, and seeds in a large bowl.

  2. Make the dressing: In a small bowl, whisk together mayo, vinegar, honey, mustard, salt, and pepper until smooth.

  3. Mix it up: Pour the dressing over the slaw mixture and toss well to combine. Make sure everything is evenly coated.

  4. Chill (optional but recommended): Let it sit in the fridge for 30 minutes to an hour to allow the flavors to meld and for the slaw to soften slightly.

  5. Serve: Garnish with extra seeds or parsley, and enjoy cold!
