Creamy Corn Cake with Cheese

Ingredients:

  • 2 cups corn kernels (fresh or frozen)

  • 1/2 cup cornmeal

  • 1/2 cup all-purpose flour

  • 1/2 cup grated cheese (cheddar, mozzarella, or a mix)

  • 1/2 cup heavy cream

  • 2 eggs

  • 1/4 cup sugar

  • 1 tsp baking powder

  • 1/4 cup butter (melted)

  • Salt and pepper to taste

  • 1/4 tsp paprika (optional for extra flavor)

  • Fresh herbs (like cilantro or parsley) for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a baking dish (about 8×8 inches) with butter or cooking spray.

  2. Prepare the corn: If you’re using fresh corn, cook the kernels in boiling water for 5-7 minutes and then drain them. If using frozen corn, just thaw and drain them.

  3. Make the batter:

    • In a large bowl, mix the cornmeal, flour, sugar, baking powder, salt, and pepper.

    • In another bowl, whisk together the eggs, melted butter, heavy cream, and paprika.

    • Add the wet ingredients to the dry ingredients and mix until combined.

  4. Add the cheese: Stir in the grated cheese and the corn kernels. Mix well to incorporate everything.

  5. Pour into the baking dish: Transfer the mixture into the prepared baking dish and spread it out evenly.

  6. Bake for about 30-40 minutes, or until the top is golden brown, and a toothpick inserted comes out clean.

  7. Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs, if desired.
