✅ Ingredients:

For the Base:

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • 2 medium carrots, peeled and diced

  • 2 celery stalks, diced

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • ½ teaspoon dried thyme

  • ½ teaspoon poultry seasoning (optional but great for pot pie flavor)

Chicken & Pasta:

  • 2 cups cooked chicken, shredded or cubed (rotisserie works great)

  • 2½ cups uncooked short pasta (like rotini, penne, or shells)

  • 3½ cups low-sodium chicken broth (plus more if needed)

  • 1 cup frozen peas

  • ½ cup frozen corn (optional)

Cream Sauce:

  • ¾ cup heavy cream (or half and half for a lighter version)

  • ¾ cup shredded cheddar cheese (or Parmesan for a sharper taste)

  • 2 tablespoons cream cheese (adds creaminess)

  • 1 tablespoon flour (to help thicken, optional)


🔪 Instructions:

1. Sauté the Veggies:

In a large deep skillet or sauté pan, heat butter and olive oil over medium heat.
Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
Stir in garlic, thyme, salt, pepper, and poultry seasoning. Cook for another minute.

2. Build the Base:

Stir in uncooked pasta and pour in the chicken broth.
Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed. Add a splash of broth if it gets too dry.

3. Add Chicken & Frozen Veggies:

Stir in cooked chicken, peas, and corn. Simmer for 2–3 minutes until heated through.

4. Make It Creamy:

Lower heat. Stir in heavy cream, cream cheese, and shredded cheddar.
If using flour: Dissolve 1 tablespoon of flour in a small amount of water or cream and stir it in to thicken.
Let everything simmer gently for 2–3 more minutes until sauce thickens and becomes creamy.

5. Finish & Serve:

Taste and adjust seasoning if needed. Garnish with fresh parsley or extra cheese if desired.
