Creamy Cauliflower Soup

Here’s a simple and delicious Cauliflower Soup recipe that’s creamy, comforting, and easy to make!


🥣 Creamy Cauliflower Soup

🧄 Ingredients:

  • 1 large head of cauliflower, cut into florets

  • 1 tablespoon olive oil or butter

  • 1 medium onion, chopped

  • 2–3 garlic cloves, minced

  • 1 potato (optional, for extra creaminess), peeled and diced

  • 4 cups vegetable or chicken broth

  • 1 cup milk or cream (or use non-dairy milk for vegan)

  • Salt and pepper to taste

  • Optional toppings: shredded cheese, croutons, fresh herbs (like parsley or chives), a drizzle of olive oil or cream


👩‍🍳 Instructions:

  1. Sauté Aromatics:

    • In a large pot, heat the olive oil over medium heat.

    • Add chopped onion and sauté until soft (about 5 minutes).

    • Add garlic and cook for another 30 seconds until fragrant.

  2. Cook the Veggies:

    • Add cauliflower florets and diced potato to the pot.

    • Pour in the broth and bring to a boil.

    • Reduce heat, cover, and simmer for 20 minutes or until cauliflower and potato are tender.

  3. Blend the Soup:

    • Use an immersion blender directly in the pot, or transfer the soup in batches to a blender.

    • Blend until smooth and creamy.

  4. Add Creaminess:

    • Return soup to the pot (if blended in a blender).

    • Stir in milk or cream and heat through gently.

    • Season with salt and pepper to taste.

  5. Serve:

    • Ladle into bowls and add your favorite toppings.


📝 Tips:

  • Roast the cauliflower before adding it to the soup for a richer, nuttier flavor.

  • For a vegan version, use olive oil and plant-based milk or coconut cream.
