Here’s a delicious Creamy Caramel Cheesecake Delight recipe that’s rich, smooth, and full of caramel goodness!


Creamy Caramel Cheesecake Delight

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)

  • ¼ cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the cheesecake filling:

  • 24 oz (3 packages) cream cheese, softened

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • ½ cup sour cream

  • ¼ cup heavy cream

For the caramel sauce:

  • 1 cup granulated sugar

  • 6 tbsp unsalted butter, cut into pieces

  • ½ cup heavy cream, warmed

For garnish (optional):

  • Whipped cream

  • Chopped nuts (pecans or walnuts)

  • Sea salt flakes


Instructions:

1. Prepare the crust:

  • Preheat oven to 325°F (163°C).

  • Mix graham cracker crumbs, sugar, and melted butter until combined.

  • Press mixture firmly into the bottom of a 9-inch springform pan.

  • Bake for 10 minutes, then remove and cool.

2. Make the cheesecake filling:

  • Beat softened cream cheese until smooth.

  • Add sugar and vanilla; beat until creamy.

  • Add eggs one at a time, mixing gently after each.

  • Blend in sour cream and heavy cream until smooth.

  • Pour filling over the cooled crust.

3. Bake the cheesecake:

  • Place the pan on a baking sheet and bake at 325°F for 50-60 minutes or until the center is almost set but still slightly jiggly.

  • Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.

  • Remove and cool completely at room temperature, then chill in fridge for at least 4 hours or overnight.

4. Make the caramel sauce:

  • In a medium saucepan over medium heat, melt sugar, stirring constantly until it turns a deep amber color.

  • Add butter carefully (it will bubble up), stir until melted.

  • Slowly pour in warm heavy cream while stirring until smooth.

  • Let cool slightly.

5. Assemble the cheesecake:

  • Pour the caramel sauce over the chilled cheesecake.

  • Optionally, garnish with whipped cream, chopped nuts, and a sprinkle of sea salt.


Tips:

  • Use room temperature ingredients for a smooth cheesecake.

  • A water bath during baking can help prevent cracking.

  • Store leftover cheesecake in the fridge covered.
