Here’s a flavorful and comforting Creamy Cajun Chicken & Rice recipe that’s easy to prepare and packed with bold Cajun spice, tender chicken, and creamy rice.


Creamy Cajun Chicken & Rice

Ingredients:

For the Cajun Chicken:

  • 2 large boneless, skinless chicken breasts (sliced thin or cubed)

  • 2 tbsp Cajun seasoning (store-bought or homemade, see below)

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Rice and Sauce:

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 1 bell pepper (red or green), diced

  • 1 cup long-grain white rice (uncooked)

  • 2 cups chicken broth

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • ½ cup grated Parmesan cheese (optional but recommended)

  • Salt & black pepper to taste

  • 1 tsp paprika (optional for added color)

  • Fresh parsley (for garnish)


Instructions:

  1. Season the Chicken:

    • Toss chicken pieces in Cajun seasoning until evenly coated.

  2. Sear the Chicken:

    • In a large skillet, heat olive oil and butter over medium-high heat.

    • Add chicken and cook 4–5 minutes per side (or until golden and cooked through). Remove and set aside.

  3. Sauté the Veggies:

    • In the same pan, add onions and bell peppers. Sauté for 3–4 minutes until softened.

    • Add garlic and sauté 30 seconds more.

  4. Add Rice and Liquid:

    • Stir in uncooked rice. Toast for 1–2 minutes.

    • Pour in chicken broth and bring to a boil.

    • Reduce heat to low, cover, and simmer for 15–18 minutes, or until rice is cooked.

  5. Add Cream and Cheese:

    • Stir in heavy cream and Parmesan. Simmer uncovered for 2–3 minutes until thickened.

    • Season with salt, pepper, and paprika if using.

  6. Finish and Serve:

    • Add the cooked chicken back into the skillet.

    • Stir to combine and warm through.

    • Garnish with chopped parsley and serve hot.


Optional Homemade Cajun Seasoning:

Mix together:

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried thyme

  • ½ tsp dried oregano

  • ¼ tsp cayenne pepper (or more for heat)

  • ¼ tsp black pepper

  • ¼ tsp salt
