Cream Cheese Cake

Here’s a classic Cream Cheese Cake recipe—rich, smooth, and simple to make!


🍰 Classic Cream Cheese Cake Recipe

Ingredients

For the crust:

  • 1½ cups graham cracker crumbs (about 10 full crackers)

  • ¼ cup granulated sugar

  • ½ cup unsalted butter, melted

For the filling:

  • 4 packages (8 oz each) cream cheese, softened

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • 4 large eggs

  • ⅔ cup sour cream

  • ⅔ cup heavy cream


Instructions

1. Prep the crust:

  • Preheat oven to 325°F (163°C).

  • Mix graham cracker crumbs, sugar, and melted butter in a bowl.

  • Press mixture into the bottom of a 9-inch springform pan.

  • Bake crust for 10 minutes. Let cool while you prepare the filling.

2. Make the filling:

  • Beat softened cream cheese in a large bowl until smooth (use a hand mixer or stand mixer).

  • Add sugar and beat until creamy and combined.

  • Add vanilla and mix.

  • Add eggs one at a time, mixing well after each addition.

  • Add sour cream and heavy cream, mixing until smooth.

3. Assemble and bake:

  • Pour filling into the cooled crust.

  • Smooth the top with a spatula.

  • Place the springform pan in a large roasting pan and pour hot water into the roasting pan (about halfway up the sides of the cake pan) to create a water bath.

  • Bake at 325°F (163°C) for 1 hour to 1 hour 10 minutes, or until the center is just set and slightly jiggly.

4. Cool and chill:

  • Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.

  • Remove from the oven and water bath. Let cool completely at room temperature.

  • Cover and refrigerate for at least 4 hours, preferably overnight.

  • Fresh berries

  • Fruit compote

  • Caramel or chocolate drizzle

  • Whipped cream
