Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 4 oz cream cheese (softened)

  • 6-8 strips of cooked bacon, crumbled

  • 1 cup shredded cheddar cheese (optional)

  • 1 ½ cups crushed Doritos (any flavor you like, Nacho Cheese works great)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and pepper to taste

  • 1-2 tbsp olive oil or melted butter

  • Toothpicks (optional, to secure chicken)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking dish with foil or parchment paper.

  2. Prepare chicken breasts:

    • Using a sharp knife, carefully slice a pocket into the side of each chicken breast (don’t cut all the way through).

    • Season the outside and inside with salt, pepper, garlic powder, and paprika.

  3. Make the filling:

    • In a bowl, combine softened cream cheese, crumbled bacon, and shredded cheddar cheese (if using). Mix well.

  4. Stuff the chicken:

    • Spoon the cream cheese and bacon mixture into each chicken pocket. Secure with toothpicks if needed.

  5. Coat with Doritos:

    • Place crushed Doritos in a shallow bowl or plate.

    • Brush each stuffed chicken breast with olive oil or melted butter on all sides, then press into the crushed Doritos to coat well.

  6. Bake:

    • Place coated chicken breasts in the prepared baking dish.

    • Bake for 25-30 minutes, or until chicken is cooked through (internal temperature should reach 165°F / 75°C) and Doritos coating is crispy.

  7. Serve:

    • Let the chicken rest for a few minutes before serving.

    • Enjoy with your favorite side like a salad, rice, or veggies!
