Crazy Dough Recipe for Pizza, Cinnamon Rolls, and More

Posted on August 4, 2025

Here’s a  recipe for Crazy Dough — a versatile dough that can be used for pizza, cinnamon rolls, flatbreads, dinner rolls, and more. It’s called “crazy” because it works well for both savory and sweet recipes and stores beautifully.

🍞 Crazy Dough Recipe (All-Purpose Yeast Dough)

🔹 Yield:

Enough for 2 large pizzas OR 12 cinnamon rolls OR 12 dinner rolls

✨ Ingredients:

Ingredient Amount
All-purpose flour 4 cups (500g)
Instant dry yeast 2¼ tsp (1 packet or 7g)
Sugar 2 tbsp (for flavor & yeast food)
Salt 1 tsp
Baking powder 1 tsp (for lightness)
Milk (warm, ~110°F) ¾ cup (180ml)
Water (warm) ½ cup (120ml)
Plain yogurt ¼ cup (60g)
Vegetable oil 2 tbsp (or melted butter)
Egg (optional) 1 (adds richness, optional)

🔪 Instructions:

1. Activate Yeast (if not using instant yeast):

  • If you’re using active dry yeast, dissolve it in the warm water + 1 tsp sugar. Let sit for 5–10 minutes until foamy.

2. Mix Dry Ingredients:

  • In a large mixing bowl, whisk together:

    • Flour

    • Salt

    • Baking powder

    • Sugar

    • Instant yeast (if using)

3. Combine Wet Ingredients:

  • In a separate bowl, mix:

    • Warm milk

    • Warm water

    • Yogurt

    • Oil

    • Egg (if using)

4. Form the Dough:

  • Add the wet ingredients into the dry ingredients.

  • Mix with a wooden spoon or dough hook until the dough starts coming together.

  • Knead for 8–10 minutes by hand or 5–6 minutes in a stand mixer until the dough is smooth and elastic.

5. First Rise:

  • Place dough in a greased bowl.

  • Cover with plastic wrap or a damp towel.

  • Let rise in a warm place for 1–1.5 hours until doubled in size.

🥶 Storage Tips:

  • Fridge: Store for up to 3 days in the fridge, wrapped tightly.

  • Freezer: Wrap in plastic + foil and freeze up to 2 months. Thaw in the fridge overnight before using.

🥐 How to Use Crazy Dough

🍕 Pizza Crust:

  • Roll out dough, add toppings, bake at 475°F (245°C) for 12–15 minutes.

🍥 Cinnamon Rolls:

  • Roll into a rectangle, spread with butter, cinnamon, and sugar. Roll, slice, and proof 30 mins. Bake at 350°F (180°C) for 20–25 mins.

🫓 Flatbreads:

  • Roll thin, cook on hot skillet for 1–2 mins each side, until puffed and golden.

🍞 Dinner Rolls:

  • Shape into balls, proof 30–40 mins. Bake at 375°F (190°C) for 15–20 mins.

🍗 Savory Pockets:

  • Fill with cooked meat/cheese, seal, and bake at 375°F (190°C) for 20–25 mins.

👩‍🍳 Tips for Success:

  • Use warm, not hot, liquids (110°F / 43°C max) to avoid killing the yeast.

  • Don’t skip the baking powder — it gives a fluffy boost.

  • For sweeter bakes, you can add 1 extra tablespoon of sugar.
