Cowboy Cookies Recipe
Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup sweetened shredded coconut
1 cup semisweet chocolate chips
1 cup chopped pecans or walnuts (optional)
Instructions:
Preheat oven: 350°F (175°C). Line baking sheets with parchment paper.
Cream butter and sugars: In a large bowl, beat the softened butter with brown sugar and granulated sugar until creamy and smooth.
Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Mix dry into wet: Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
Add oats, coconut, chocolate chips, and nuts: Stir these in by hand.
Scoop and bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake: For 10 to 12 minutes or until edges are golden but centers still look slightly soft.
Cool: Let cookies cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
