⭐ Ingredients:

For the Cowboy Butter:

  • 1/2 cup (1 stick) unsalted butter, melted

  • 4 cloves garlic, minced

  • 1 tbsp Dijon mustard

  • 1 tbsp freshly chopped parsley

  • 1 tbsp lemon juice

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper (adjust to taste)

  • 1/2 tsp crushed red pepper flakes

  • Salt and pepper to taste

For the Chicken and Pasta:

  • 2 chicken breasts, cut into bite-sized pieces

  • Salt & pepper to season chicken

  • 1 tbsp olive oil

  • 1/2 cup grated Parmesan cheese (optional for garnish)

  • 12 oz linguine

  • 1/2 cup reserved pasta water

  • Optional: sautéed mushrooms, spinach, or cherry tomatoes

🍳 Instructions:

  1. Cook the Pasta:

    • Boil linguine in salted water until al dente. Reserve 1/2 cup of pasta water before draining.

  2. Make the Cowboy Butter:

    • In a bowl, mix melted butter, garlic, mustard, lemon juice, parsley, paprika, cayenne, red pepper flakes, salt, and pepper. Set aside.

  3. Cook the Chicken:

    • Season chicken with salt and pepper.

    • Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through (about 5–6 minutes). Remove and set aside.

  4. Combine Everything:

    • In the same pan, add cowboy butter and stir to deglaze the pan.

    • Return chicken to the pan, coating it in the butter sauce.

    • Add drained linguine and a bit of reserved pasta water to loosen the sauce. Toss until everything is coated and heated through.

  5. Serve:

    • Plate up with a sprinkle of Parmesan and extra parsley or chili flakes if desired.

🔥 Pro Tips:

  • Use rotisserie chicken for a shortcut.

  • For extra richness, stir in a splash of cream or cream cheese.

  • Add veggies like spinach or blistered tomatoes for color and texture.
