Ingredients (Makes about 6-8 small pancakes):

  • 1 cup cottage cheese (full-fat or low-fat)

  • 2 large eggs

  • 1/2 cup all-purpose flour (or oat flour for a healthier version)

  • 1/2 tsp baking powder (optional, for extra fluff)

  • 1–2 tbsp sugar or honey (optional, to taste)

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt

  • Butter or oil for cooking

Optional add-ins:

  • Berries

  • Lemon zest

  • Cinnamon

  • Chocolate chips


Instructions:

  1. Mix wet ingredients: In a medium bowl, whisk together the cottage cheese, eggs, and vanilla extract.

  2. Add dry ingredients: Stir in the flour, baking powder, sugar (if using), and salt. Mix until just combined β€” batter will be thick and a little lumpy from the cottage cheese.

  3. Preheat pan: Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil.

  4. Cook pancakes: Scoop about 1/4 cup of batter per pancake onto the pan. Cook for 2–3 minutes until bubbles form and the edges look set. Flip and cook for another 1–2 minutes until golden and cooked through.
