Cottage cheese cake

Here’s a simple and delicious Cottage Cheese Cake recipe for you! It’s lighter than regular cheesecake but still creamy and tasty.


Cottage Cheese Cake Recipe

Ingredients:

  • 2 cups cottage cheese (smooth or blended for smoother texture)

  • 3/4 cup sugar

  • 3 large eggs

  • 1/2 cup all-purpose flour

  • 1/2 cup sour cream or plain yogurt

  • 1 tsp vanilla extract

  • Zest of 1 lemon (optional, for freshness)

  • Pinch of salt

  • Butter or oil (for greasing the pan)


Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or round cake pan.

  2. Prepare Cottage Cheese:
    If your cottage cheese is chunky, blend it briefly in a food processor or blender until smooth. This will give a creamier texture.

  3. Mix Wet Ingredients:
    In a large bowl, beat the eggs with sugar until light and fluffy. Add the cottage cheese, sour cream (or yogurt), vanilla extract, lemon zest, and mix well.

  4. Add Dry Ingredients:
    Sift in the flour and add a pinch of salt. Gently fold it into the wet mixture until smooth and combined.

  5. Bake:
    Pour the batter into the prepared pan. Bake for about 45-55 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.

  6. Cool & Serve:
    Let the cake cool in the pan for 10 minutes, then release the springform or remove the cake from the pan. Chill in the fridge for a few hours before serving for best texture.


Optional Toppings: Fresh berries, fruit compote, honey drizzle, or a dusting of powdered sugar.
