Here’s a recipe for making Colombian Coconut Limeade (Limonada de Coco) — a beloved coastal Colombian drink that is creamy, tart, and ultra-refreshing. Ideal for summer days, beach vibes, or just when you need a tropical twist.

📝 Ingredients (Serves 2–3)

  • 1 cup coconut milk
    (Use canned unsweetened coconut milk for best results. Shake the can before opening to mix the cream and water.)

  • 1/2 cup fresh lime juice
    (About 4–5 medium limes. Use key limes for a more authentic flavor if available.)

  • 1/4 to 1/3 cup white granulated sugar
    (Start with 1/4 cup and adjust to taste.)

  • 1 to 1½ cups ice cubes
    (More if you want it thicker and frostier.)

  • 1/2 cup cold water (optional)
    (Use to adjust thickness or if your blender needs more liquid.)

  • Pinch of salt (optional but enhances flavor)

  • Garnish (optional):
    Lime wedges, mint leaves, shredded coconut, or a rim of coconut sugar.


🥣 Instructions

1. Juice the Limes

  • Roll the limes on a hard surface to soften them.

  • Cut and juice until you have 1/2 cup of fresh lime juice.

  • Strain the juice to remove seeds and excess pulp.

2. Prepare the Blender

  • Add to a blender in this order:

    • 1 cup coconut milk

    • 1/2 cup lime juice

    • 1/4 to 1/3 cup sugar

    • 1 to 1½ cups ice

    • Optional: 1/2 cup cold water to help blend

    • A small pinch of salt (optional, to enhance the flavors)

3. Blend Until Frothy and Smooth

  • Blend for 30–60 seconds, until the drink is creamy, icy, and fully combined.

  • Taste and adjust: Add more sugar for sweetness, lime juice for tartness, or water to thin it out.

4. Serve Immediately

  • Pour into chilled glasses.

  • Garnish with lime wedges, mint sprigs, or a sprinkle of shredded coconut if desired.

  • Serve with a straw or spoon (it can get frosty and thick!).


🔄 Variations

  • Boozy Version: Add a shot of white rum or coconut rum for a tropical cocktail.

  • Creamier Version: Replace part of the coconut milk with cream of coconut (like Coco López), but reduce the sugar.

  • Frozen Pops: Pour into molds and freeze to make limeade popsicles.


📌 Storage Tips

  • Best enjoyed fresh. The acidity of lime may cause separation over time.

  • If you must store, refrigerate for up to 24 hours and shake or stir well before serving.
