🥥🍍 Coconut Pineapple Cream Parfaits
Ingredients:
For the coconut cream layer:

1 cup heavy whipping cream (chilled)

1/2 cup coconut cream (or full-fat coconut milk, thick part only)

2 tbsp powdered sugar

1 tsp vanilla extract
For the pineapple layer:

1 1/2 cups diced fresh pineapple (or canned, drained)

1–2 tbsp honey or sugar (optional, depending on sweetness of pineapple)

1 tbsp lime juice (optional, for brightness)
Other layers:

Crushed graham crackers, vanilla wafers, or shortbread cookies (about 1 cup)

Toasted coconut flakes (optional, for garnish)

Mint leaves (optional)
Instructions:

Prepare the Pineapple Layer:

In a small saucepan (if cooking) or bowl (if fresh), combine diced pineapple with honey/sugar and lime juice.

Optional Cooked Method: Simmer for 5–7 minutes until syrupy. Let cool.

Raw Method: Toss and chill.

Make the Coconut Whipped Cream:

Beat heavy cream until soft peaks form.

Add coconut cream, powdered sugar, and vanilla. Beat until medium-stiff peaks form. Chill until ready to use.

In glasses or jars, layer in order:
