🍰 Ingredients

For the Coca-Cola Pound Cake:

  • 3 cups all-purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 cup (2 sticks) unsalted butter, softened

  • ½ cup vegetable shortening (or sub with butter for a more buttery taste)

  • 3 cups granulated sugar

  • 5 large eggs

  • 1 cup Coca-Cola (not diet)

  • 1 tsp vanilla extract

  • ½ cup buttermilk

  • Optional: 1 tsp cinnamon or ¼ tsp nutmeg for warm spice notes


For the Coconut Pecan Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 3–3½ cups powdered sugar (adjust for sweetness/consistency)

  • 1 tsp vanilla extract

  • 1–2 tbsp heavy cream or milk (for desired texture)

  • 1 cup sweetened shredded coconut, toasted

  • 1 cup chopped pecans, toasted

  • Pinch of salt (balances sweetness)


🔥 Optional Coca-Cola Glaze (for extra flavor):

  • 1 cup Coca-Cola

  • ½ cup brown sugar

  • 1 tbsp butter

  • Reduce over medium heat until syrupy, about 15–20 minutes.


🥣 Instructions

1. Prepare the Oven and Pan

  • Preheat oven to 325°F (165°C).

  • Grease and flour a 10-inch Bundt or tube pan thoroughly. You can also use baking spray with flour.


2. Make the Pound Cake Batter

  1. In a medium bowl, whisk together flour, baking powder, and salt.

  2. In a large mixing bowl, cream together the butter, shortening, and sugar until light and fluffy (about 4–5 minutes).

  3. Add eggs one at a time, mixing well after each.

  4. In a measuring cup, combine Coca-Cola, buttermilk, and vanilla.

  5. Add dry ingredients to the creamed mixture alternately with the Coca-Cola mixture, starting and ending with flour.

  6. Mix until just combined—do not overmix.


3. Bake

  • Pour batter into the prepared pan.

  • Bake for 75 to 85 minutes, or until a toothpick inserted comes out clean.

  • Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.


4. Make the Frosting

  1. Toast the coconut and pecans:

    • Spread on a baking sheet and toast in a 325°F oven for 5–8 minutes until golden and fragrant. Cool.

  2. In a large bowl, beat the cream cheese and butter until smooth.

  3. Add vanilla extract and a pinch of salt.

  4. Gradually add powdered sugar, ½ cup at a time, beating until fluffy.

  5. Add cream or milk a tablespoon at a time until spreadable.

  6. Fold in toasted coconut and pecans.


5. Frost the Cake

  • Once the cake is completely cool, spread the cream cheese frosting over the top (or drizzle it if preferred).

  • Optionally, drizzle the Coca-Cola glaze over the frosting or serve on the side.

  • Don’t overmix the batter once you add the flour, or the cake could be tough.

  • The Coca-Cola flavor is subtle but adds moistness and caramel notes—don’t skip it.

  • Toasting nuts and coconut deepens flavor and adds texture.
