1/4 cup dry white wine (e.g. Marsala), plus more if needed

2 cups whole milk ricotta (well-drained)

1/2 cup powdered sugar (more to taste)

1 tsp vanilla extract

1/4 tsp cinnamon (optional)

1/3 cup mini chocolate chips or chopped dark chocolate

Candied orange peel or chopped pistachios (optional)

1. Make the Dough:

In a large bowl, mix flour, sugar, cinnamon, and salt.
