CINNAMON ROLL POKE CAKE recipe

Here’s a delicious Cinnamon Roll Poke Cake recipe — it combines the gooey, buttery, cinnamon goodness of a cinnamon roll with the ease and texture of a moist poke cake. Perfect for brunch, dessert, or holiday treats!

🧁 Ingredients

For the Cake:

  • 1 box white or yellow cake mix (plus ingredients on box: eggs, oil, water)

  • 2 tsp ground cinnamon

  • 1 tsp vanilla extract (optional)

For the Cinnamon Filling:

  • 1 cup brown sugar, packed

  • 2 tbsp all-purpose flour

  • 1 tbsp ground cinnamon

  • ½ cup (1 stick) butter, melted

For the Glaze/Icing:

  • 1 can (14 oz) sweetened condensed milk

  • 1 tsp vanilla extract

  • OR:

    • 1 cup powdered sugar

    • 2–3 tbsp milk

    • ½ tsp vanilla extract


📝 Instructions

1. Bake the Cake:

  1. Preheat oven to 350°F (175°C).

  2. Prepare the cake mix according to box instructions. Stir in cinnamon and vanilla (if using).

  3. Pour into a greased 9×13-inch pan and bake for 30–35 minutes, or until a toothpick comes out clean.

2. Make the Holes:

  1. Remove cake from oven and while still warm, poke holes all over using the handle of a wooden spoon (space about 1 inch apart).

3. Add Cinnamon Filling:

  1. In a bowl, mix brown sugar, flour, cinnamon, and melted butter until well combined.

  2. Spoon or pour mixture over cake, letting it seep into the holes.

4. Pour Sweetened Condensed Milk:

  • Pour the can of sweetened condensed milk evenly over the cake (or use glaze below if you prefer less sweetness).

5. Cool and Ice:

  • Let the cake cool completely.

  • Drizzle with glaze made from powdered sugar, milk, and vanilla, OR use cream cheese frosting for extra richness.

Optional Cream Cheese Frosting:

  • 4 oz cream cheese, softened

  • 2 tbsp butter, softened

  • 1 cup powdered sugar

  • ½ tsp vanilla extract


✅ Tips

  • Warm slices slightly before serving for gooey, cinnamon roll vibes.

  • Top with chopped pecans or a dusting of cinnamon for extra flair.

  • Store covered at room temp for 2 days or refrigerated up to 5 days.
