🍠 Cinnamon Honey Butter Sweet Potato Cornbread

Ingredients

For the Cornbread:

  • 1 cup all-purpose flour

  • 1 cup yellow cornmeal

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ¼ tsp ground nutmeg (optional)

  • ¾ cup mashed sweet potato (about 1 medium sweet potato, roasted or boiled)

  • 2 large eggs

  • 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)

  • ⅓ cup honey

  • ⅓ cup melted butter (unsalted)

  • 1 tsp vanilla extract

For the Cinnamon Honey Butter Swirl:

  • ¼ cup softened butter

  • 2 tbsp honey

  • 1 tsp cinnamon


Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish or line it with parchment paper.

  2. Make the Cornbread Batter:
    In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, cinnamon, and nutmeg.
    In a separate bowl, mix the mashed sweet potato, eggs, buttermilk, honey, melted butter, and vanilla until smooth.
    Add the wet ingredients to the dry and stir until just combined — don’t overmix.

  3. Make the Cinnamon Honey Butter:
    In a small bowl, combine softened butter, honey, and cinnamon until smooth.

  4. Assemble:
    Pour half of the cornbread batter into the prepared pan.
    Dot or drizzle half of the cinnamon honey butter over the batter, then swirl gently with a knife.
    Add the remaining batter, then top with the remaining cinnamon honey butter and swirl again.

  5. Bake:
    Bake for 28–35 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden and slightly caramelized.

  6. Cool & Serve:
    Let cool for 10–15 minutes before slicing. Serve warm with extra honey butter on the side if desired.


📝 Tips

  • To make it more dessert-like, sprinkle with a little brown sugar before baking.

  • Add chopped pecans or walnuts for extra texture.

  • Use canned sweet potato puree if you’re short on time.
