  • 2 tsp vanilla extract

  • 1 cup (240ml) hot water (or hot coffee for richer flavor)

For the Peanut Butter Frosting:
  • 1 cup (230g) unsalted butter, softened

  • 1 cup (250g) creamy peanut butter

  • 3–4 cups (360–480g) powdered sugar

  • ¼ cup (60ml) heavy cream (adjust for desired consistency)

  • 1 tsp vanilla extract

  • Pinch of salt

For the Chocolate Ganache:
  • ½ cup (120ml) heavy cream

  • 4 oz (115g) semi-sweet or dark chocolate, chopped

Instructions

1. Make the Cake:
  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.

  2. In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

  3. Add eggs, buttermilk, oil, and vanilla. Mix until well combined.

  4. Stir in the hot water (batter will be thin).

  5. Divide evenly into pans and bake for 30–35 minutes, or until a toothpick comes out clean.

  6. Cool in pans for 10 minutes, then turn out onto racks to cool completely.

2. Make the Peanut Butter Frosting:
  1. Beat butter and peanut butter until smooth and creamy.

  2. Gradually add powdered sugar, then vanilla and salt.

  3. Add cream a little at a time until fluffy and spreadable.

3. Make the Ganache:
  1. Heat cream until just simmering, then pour over chopped chocolate.

  2. Let sit 2–3 minutes, then stir until smooth and glossy.

4. Assemble the Cake:
  1. Place one cake layer on a plate and spread with frosting.

  2. Top with the second layer and frost the top and sides.

  3. Pour ganache over the top, letting it drip down the sides.

  4. Chill for 30 minutes to set, then serve.

🍰 Tips

  • Use Dutch-processed cocoa for a deeper chocolate flavor.
