Here’s a  Chocolate Eclair Cake recipe — a no-bake dessert that combines the flavors of a classic éclair in an easy layered format. It’s rich, creamy, and perfect for gatherings.


🍫 Chocolate Eclair Cake Recipe (No-Bake Dessert)

🕒 Prep Time: 20 minutes

⏳ Chill Time: At least 4 hours (overnight is best)

🧾 Ingredients

For the Cake Layers:

  • 2 (3.4 oz) boxes of instant vanilla pudding mix

  • 3 cups cold milk

  • 1 (8 oz) tub Cool Whip, thawed (or 2 cups homemade whipped cream)

  • 1 box graham crackers (about 14.4 oz)

For the Chocolate Ganache Topping (or use canned frosting – see shortcut below):

  • 1 cup semi-sweet chocolate chips

  • ½ cup heavy cream

  • 2 tablespoons unsalted butter

  • 1 teaspoon vanilla extract


🍳 Instructions

Step 1: Make the Filling

  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until thickened (about 2 minutes).

  2. Gently fold in the Cool Whip until fully combined. Set aside.

Step 2: Layer the Dessert

  1. In a 9×13-inch baking dish, arrange a single layer of graham crackers, breaking them as needed to fit.

  2. Spread half of the pudding mixture evenly over the graham crackers.

  3. Add another layer of graham crackers.

  4. Spread the remaining pudding mixture on top.

  5. Add a final layer of graham crackers on top. Set aside.

Step 3: Make the Ganache Topping

  1. In a small saucepan, heat the heavy cream and butter over medium heat until just about to boil (do not boil).

  2. Remove from heat and pour over the chocolate chips in a heatproof bowl.

  3. Let sit for 2 minutes, then stir until smooth and glossy.

  4. Stir in the vanilla extract.

✅ Shortcut: You can also use 1 can of chocolate frosting (microwave for 10–15 seconds to make it easier to spread).

Step 4: Assemble & Chill

  1. Pour the chocolate ganache over the top graham cracker layer and spread evenly.

  2. Cover the dish with plastic wrap and refrigerate for at least 4 hours (overnight is best) to allow the graham crackers to soften.


🍴 To Serve

Cut into squares and serve chilled. You can garnish with a little whipped cream, chocolate shavings, or fresh berries if desired.

  • Pudding flavor: You can use French vanilla, cheesecake, or chocolate pudding for variety.

  • Fresh version: Use homemade whipped cream instead of Cool Whip for a richer taste.

  • Add-ins: Add sliced bananas or strawberries between the pudding layers for extra flavor.
