Here’s a rich and indulgent Chocolate Coffee Cake with Lotus Cream Topping recipe — a decadent twist combining chocolate, coffee, and the spiced caramel flavor of Lotus Biscoff spread. Perfect for dessert or a special brunch.


🍫 Chocolate Coffee Cake with Lotus Cream Topping

Ingredients

For the Cake:

  • 1 cup (240ml) hot brewed coffee

  • ¾ cup (75g) unsweetened cocoa powder

  • 1½ cups (300g) granulated sugar

  • 1½ cups (190g) all-purpose flour

  • ½ tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • 2 large eggs

  • ½ cup (120ml) vegetable oil

  • ¾ cup (180ml) sour cream or plain yogurt

  • 2 tsp vanilla extract

For the Lotus Cream Topping:

  • 1 cup (240ml) heavy cream, cold

  • ½ cup (120g) Lotus Biscoff spread (creamy, not crunchy)

  • 2 tbsp powdered sugar (optional, to taste)

  • ½ tsp vanilla extract

Optional Garnish:

  • Crushed Lotus Biscoff cookies

  • Melted chocolate drizzle

  • Coffee beans or chocolate shavings


Instructions

1. Make the Chocolate Coffee Cake:
  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round or square cake pan.

  2. In a medium bowl, whisk hot coffee and cocoa powder until smooth. Let cool slightly.

  3. In a large mixing bowl, whisk sugar, flour, baking soda, baking powder, and salt.

  4. Add eggs, oil, sour cream, and vanilla to the dry ingredients. Mix until combined.

  5. Slowly pour in the coffee-cocoa mixture and whisk until smooth.

  6. Pour the batter into the prepared pan. Bake for 35–40 minutes, or until a toothpick comes out clean.

  7. Let the cake cool completely before topping.


2. Prepare the Lotus Cream Topping:
  1. In a mixing bowl, beat the heavy cream until soft peaks form.

  2. In another bowl, mix Biscoff spread, powdered sugar, and vanilla until smooth.

  3. Gently fold the whipped cream into the Biscoff mixture until fully combined and fluffy.

  4. Chill the topping for 20–30 minutes if it feels too soft.


3. Assemble the Cake:
  1. Spread the Lotus cream topping generously over the cooled cake.

  2. Garnish with crushed Biscoff cookies, a drizzle of melted chocolate, or coffee beans for a beautiful finish.


☕ Tips:

  • Make it ahead: The cake can be baked a day ahead. Add topping just before serving.

  • Want more Lotus flavor? Add crushed Biscoff cookies to the batter or a thin layer of melted spread between layers if making a layer cake.

  • Serve with: A cup of espresso or latte for the perfect pairing.
