🍗 Chicken Thighs & Potatoes Delight

Ingredients (Serves 4)

  • 4–6 bone-in, skin-on chicken thighs

  • 4 medium Yukon Gold or red potatoes, cut into chunks

  • 1 medium onion, sliced

  • 4 garlic cloves, minced

  • 2 tbsp olive oil

  • 1 tbsp butter (optional, for richness)

  • 1 tsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp dried rosemary (or Italian seasoning)

  • Salt & black pepper, to taste

  • Juice of ½ lemon

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat Oven:

    • Set oven to 400°F (200°C).

  2. Season the Chicken:

    • Pat chicken thighs dry with paper towels.

    • Rub with olive oil, smoked paprika, thyme, salt, and pepper.

  3. Prepare the Potatoes:

    • Toss potato chunks with olive oil, rosemary, garlic, and a bit of salt and pepper.

    • (Optional: Add sliced onion for sweetness and depth.)

  4. Assemble in a Baking Dish or Sheet Pan:

    • Spread potatoes and onions in a single layer.

    • Nestle the chicken thighs on top, skin-side up.

    • Dot with butter (optional) for extra richness.

  5. Roast:

    • Bake for 40–50 minutes, or until the chicken skin is golden and internal temp reaches 165°F (74°C), and potatoes are fork-tender.

    • Broil for the last 2–3 minutes for extra crispiness on the chicken skin.

  6. Finish:

    • Squeeze fresh lemon juice over everything.

    • Sprinkle with chopped parsley.

  • Add vegetables: Carrots, Brussels sprouts, or bell peppers roast beautifully with this dish.

  • Make it creamy: Add a splash of cream or a dollop of sour cream before serving.
