CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH

Here’s a Chicken, Spinach, and Mushroom Low-Carb Oven Dish recipe that’s flavorful, filling, and keto-friendly:


🍗 CHICKEN, SPINACH & MUSHROOM LOW-CARB OVEN DISH

📝 Ingredients:

  • 2 tbsp olive oil or butter

  • 1 lb (450g) chicken breast, cut into bite-size pieces or thin strips

  • 2 cups mushrooms, sliced (button, cremini, or your choice)

  • 3 cups fresh spinach (or 1 cup frozen, drained well)

  • 3 cloves garlic, minced

  • 1/2 cup heavy cream

  • 1/2 cup cream cheese (softened)

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp paprika (optional)

  • 1/4 tsp crushed red pepper flakes (optional)


🔪 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cook chicken:
    In a large skillet, heat olive oil over medium-high heat. Add the chicken, season with salt and pepper, and sauté until golden and cooked through (6–8 minutes). Remove and set aside.

  3. Sauté veggies:
    In the same skillet, add mushrooms and cook until browned (about 5–7 minutes). Add garlic and cook for 1 minute. Then add spinach and cook until wilted.

  4. Make the sauce:
    Reduce heat to low. Add cream cheese and stir until melted. Pour in the heavy cream, mix well. Add half the mozzarella and all the Parmesan. Stir until creamy and smooth.

  5. Combine:
    Return the chicken to the skillet, stir to combine with the sauce and vegetables. Taste and adjust seasoning.

  6. Transfer to baking dish:
    Pour everything into a greased baking dish (8×8 or similar). Top with the remaining mozzarella and a sprinkle of paprika or red pepper flakes, if using.

  7. Bake:
    Bake for 15–20 minutes, until bubbly and golden on top.

  8. Serve hot, optionally with a side of zucchini noodles, cauliflower rice, or a fresh green salad.
