Chicken Parmesan

Here’s a classic, delicious Chicken Parmesan recipe for you!


Chicken Parmesan

Ingredients:

  • 2 large boneless, skinless chicken breasts (halved horizontally to make 4 thinner cutlets)

  • Salt and pepper, to taste

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 cup breadcrumbs (Italian seasoned or plain + 1 tsp Italian seasoning)

  • 1/2 cup grated Parmesan cheese

  • 1-2 cups marinara sauce (store-bought or homemade)

  • 1 1/2 cups shredded mozzarella cheese

  • Olive oil or vegetable oil (for frying)

  • Fresh basil or parsley (optional, for garnish)

  • Cooked pasta or a side salad (optional, for serving)


Instructions:

  1. Prep the chicken:

    • Slice chicken breasts horizontally to make thinner cutlets. If needed, pound them gently between plastic wrap to even thickness (~1/2 inch).

    • Season both sides with salt and pepper.

  2. Set up dredging stations:

    • Place flour in a shallow dish.

    • Beat eggs in another shallow dish.

    • Mix breadcrumbs and grated Parmesan in a third shallow dish.

  3. Coat the chicken:

    • Dredge each cutlet in flour, shaking off excess.

    • Dip in beaten eggs, letting excess drip off.

    • Press into breadcrumb-Parmesan mixture until well coated.

  4. Cook the chicken:

    • Heat about 1/4 inch of oil in a large skillet over medium heat.

    • Fry chicken cutlets 3-4 minutes per side, until golden brown and cooked through.

    • Transfer to a paper towel-lined plate to drain excess oil.

  5. Assemble and bake:

    • Preheat oven to 400°F (200°C).

    • Spread a thin layer of marinara sauce in a baking dish.

    • Place fried chicken cutlets in the dish.

    • Spoon marinara sauce over each cutlet.

    • Sprinkle shredded mozzarella evenly on top.

    • Bake uncovered for about 15 minutes or until cheese is melted and bubbly.

  6. Serve:

    • Garnish with fresh basil or parsley if desired.

    • Serve hot with pasta, garlic bread, or a green salad.
