Here’s a simple and tasty Chicken Macaroni Salad recipe for you!


Chicken Macaroni Salad

Ingredients:

  • 2 cups elbow macaroni

  • 2 cups cooked chicken, shredded or diced

  • 1 cup celery, chopped

  • 1/2 cup red bell pepper, diced (optional)

  • 1/2 cup red onion, finely chopped

  • 1 cup shredded cheddar cheese (optional)

  • 1 cup mayonnaise

  • 2 tablespoons sour cream (optional, for creaminess)

  • 1 tablespoon Dijon mustard or yellow mustard

  • 1 tablespoon apple cider vinegar or lemon juice

  • Salt and pepper to taste

  • 1 teaspoon sugar (optional)

  • Fresh parsley or dill for garnish (optional)

Instructions:

  1. Cook macaroni according to package instructions until al dente. Drain and rinse under cold water to cool completely.

  2. In a large bowl, combine the cooked macaroni, chicken, celery, bell pepper, red onion, and cheese (if using).

  3. In a separate small bowl, whisk together the mayonnaise, sour cream, mustard, vinegar (or lemon juice), sugar, salt, and pepper until smooth.

  4. Pour the dressing over the macaroni mixture and gently toss to combine.

  5. Taste and adjust seasoning with more salt, pepper, or vinegar if needed.

  6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

  7. Garnish with fresh parsley or dill before serving, if desired.
