🍗 Chicken in Boursin Sauce with Garlic & Fine Herbs

🧾 Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • Salt and freshly ground black pepper

  • 1 tablespoon olive oil

  • 1 tablespoon unsalted butter

For the Sauce:

  • 1 tablespoon butter (or olive oil)

  • 2 cloves garlic (minced)

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • 1 (5.2 oz / 150g) package Boursin Garlic & Fine Herbs cheese

  • ½ cup chicken broth (low sodium)

  • Optional: 1 teaspoon Dijon mustard (adds depth)

  • Fresh chopped parsley or chives (for garnish)

🔪 Step-by-Step Instructions

1. Prepare the Chicken:

  • Season chicken breasts with salt and pepper.

  • Heat olive oil and butter in a large skillet over medium-high heat.

  • Add chicken and cook for 4–6 minutes per side, depending on thickness, until golden brown and cooked through (internal temp: 165°F / 74°C).

  • Remove from skillet and keep warm.

2. Make the Boursin Sauce:

  • In the same skillet, reduce heat to medium.

  • Add a tablespoon of butter and sauté garlic for 30 seconds until fragrant (do not brown).

  • Pour in chicken broth and stir to deglaze the pan, scraping up any browned bits.

  • Add heavy cream and stir well.

  • Crumble in the Boursin cheese and stir continuously until melted and smooth.

  • Add Dijon mustard (if using) and stir until fully incorporated.

  • Let the sauce simmer gently for 3–5 minutes, until slightly thickened.

3. Finish the Dish:

  • Return the cooked chicken to the skillet.

  • Spoon sauce over the chicken and simmer for 2–3 more minutes, letting flavors meld.

  • Garnish with chopped parsley or chives.

🍽️ Serving Suggestions:

  • Serve over mashed potatoes, rice, pasta, or with crusty bread to soak up the sauce.

  • Add a side of roasted green beans, steamed broccoli, or asparagus.

✅ Tips & Variations:

  • Add mushrooms or spinach to the sauce for extra texture and nutrients.

  • Use chicken thighs for a juicier option.

  • Swap Boursin Garlic & Fine Herbs with Shallot & Chive or Pepper flavors for a twist.
